Soft madeleines with lemon bump 🍋

She presents her recipe for soft madeleines with a lemon bump, a perfect treat for lovers of gluten-free and lactose-free sweets, made in our madeleine mold . Ingredients for 12 madeleines

🥚 1 egg
🥣 40g of organic all-purpose mix @monfournil
🍯 2 tablespoons of lemon honey
🧈 35g of margarine
🧁 5g of gluten-free yeast
🍋 The zest of an organic lemon
🌟 5g of baking powder

Benefits of the ingredients:

  • Gluten and lactose free: for people with intolerances/allergies
  • Lemon honey: rich in antioxidants
  • Lemon zest: excellent source of vitamin C

Instructions

Preparation of the dough:

In a bowl , mix the organic flour mix and the yeast. Add the honey, margarine and egg. Grate the lemon zest and stir it into the mixture.

Cooking :

Preheat your oven to 240°C. Pour the batter into the madeleine molds using the spatula . Bake for 3 minutes at 240°C. Without opening the oven, lower the oven temperature to 180°C and bake for 4 more minutes. Adjust if necessary according to your oven.

Finishing :

Using a Menastyl brush , cover the tops of the madeleines with lemon honey.
