Chef Jeffrey Cagnes' Babka recipe! 👩‍🍳

Ingredients for babka

🌾 250 g of flour
🧂 3g of salt
🍬 50 g of sugar
🌟 12g of fresh baker's yeast
🥛 150g of milk
🧈 50g of butter

Ingredients for babka

💧 15g of water
🍬 20 g of sugar

Instructions
  1. Preparation of the dough : Mix all the ingredients except the butter in the robot at medium speed for 20 minutes. When the dough comes away from the bowl, add the butter little by little. As soon as the dough comes away from the bowl again, form a ball and let it rest for 1 hour in the fridge (overnight for a better result).
  2. Preparation of the sugar syrup: Boil the water and sugar.
  3. Forming the babka: Roll out the dough into a rectangle. Spread the praline paste, add the chocolate chips and crushed pecans. Roll the dough into a sausage shape, then slice it into 7 pieces. Place the slices in the Menastyl springform pan . Let rise at room temperature for 45 minutes.
  4. Gourmet Finish : When it comes out of the oven, brush with sugar syrup and add a few chips and pecans. Enjoy your meal! 🥧
