How to cook with a wok?

The wok is an incredibly versatile piece of cooking equipment, allowing you to stir-fry, fry, steam, braise and much more. Used primarily in Asian cuisine, the wok allows for quick and even cooking thanks to its unique shape. Discover how to cook with our woks.

Stir-frying food

For this cooking, we recommend cutting the ingredients into uniformly sized pieces and preparing the sauces in advance. Once the preparation is finished, heat the wok over high heat until it is very hot (be careful, heat your pan gently, do not turn on the high heat as soon as cooking begins). Once the wok is hot, add a small amount of oil and add the ingredients in order of cooking time (meats, vegetables, sauces). Stir constantly to ensure even cooking.

Fry

To fry, you need enough oil to submerge the food. Heat the oil to about 180°C. Test the heat of your oil with a wooden stick, it should sizzle or use our kitchen thermometer . Once the oil is at the right temperature, fry in small batches to avoid cooling the oil and use a skimmer to remove the food.

Steaming

For this cooking, you will need the help of a bamboo basket or a support to raise the food above the water. The water must be in the bottom of the wok without touching the food. Cover your wok with a lid and cook over medium heat.

After cooking

Allow your wok and its contents to cool . Never run a wok with a non-stick coating directly under water. Once the wok has cooled completely, wash with hot water using a non-abrasive sponge, using a soft brush if necessary. Dry immediately afterwards to avoid rusting.
